Natural Mineral Sparkling Water: Water from a natural mineral source, carbonated (naturally carbonated from source or CO2 added after). The most premium category. Requires a natural mineral water source — not accessible to most startup brands.

The Science of Carbonation: What Every Sparkling Water Brand Must Know
Understanding carbonation is fundamental to building a sparkling water product that delivers the right consumer experience and maintains quality through shelf life.
What Is Carbonation?
Carbonation is the dissolution of CO2 (carbon dioxide) gas in liquid under pressure. The dissolved CO2 creates carbonic acid and gives the characteristic tingling mouthfeel and effervescence of sparkling water.
The level of carbonation is measured in volumes of CO2 — the ratio of dissolved CO2 volume to liquid volume at standard temperature and pressure.
Carbonation Levels by Product Type

Target for flavoured sparkling water: 3.0–3.8 volumes CO2 — delivers clear sparkling sensation without being harsh or overwhelming the delicate flavour.
Target for functional sparkling water: 2.5–3.5 volumes — slightly lower carbonation is preferred where functional ingredients contribute to flavour complexity.
Carbonation and pH
When CO2 dissolves in water, it forms carbonic acid, which lowers the pH. Plain carbonated water typically has a pH of 4.5–5.5. Adding lemon flavour or citric acid further reduces pH.
Why pH matters:
- Lower pH improves microbiological stability
- Lower pH can affect flavour of added ingredients
- Very low pH (below 3.5) can affect packaging compatibility — some packaging materials are not rated for very acidic products at carbonation pressure
Carbonation and Temperature
CO2 solubility in water increases as temperature decreases. This means:
- Cold water dissolves CO2 more easily and retains it better
- Warm water releases CO2 faster — which is why sparkling water goes flat faster at room temperature
- Commercial carbonation is performed on chilled water (4–8°C)
Carbonation and Packaging Pressure
Dissolved CO2 creates internal pressure in the packaging. At typical sparkling water carbonation levels (3–4 volumes CO2), the internal pressure at ambient temperature is approximately 2–3 bar.
Packaging must be rated for this pressure:
- PET bottles: Must be carbonation-rated PET (thicker walls, specific resin grades). Standard PET bottles are not adequate.
- Aluminium cans: Excellent for carbonated beverages — strong, pressure-resistant, complete light barrier, and increasingly preferred for premium positioning.
- Glass bottles: Traditional premium packaging. Heavy, strong, excellent barrier. Crown cap sealing for carbonated products.

Water Quality
The base water is the foundation of the product. Use RO (Reverse Osmosis) purified water with consistent mineral content. Water hardness (TDS) affects both carbonation uptake and flavour — high TDS water can interfere with delicate flavour profiles. Target TDS of 50–150 ppm for flavoured sparkling water.
Natural Flavour Selection
Flavoured sparkling water is distinguished from other carbonated drinks by its minimal ingredient list — typically water, CO2, and natural flavour. The flavour must be:
- Subtle and clean — not competing with the refreshing sparkling water base
- FSSAI-compliant — natural flavouring substance from FSSAI’s permitted list
- CO2-stable — some delicate aroma compounds are lost during carbonation or over shelf life
- No sweetness (for zero-sugar positioning) — the flavour note should suggest the fruit without sweetness
Best-performing flavour profiles for sparkling water:
- Lemon / lime (classic, universal)
- Cucumber-mint (refreshing, premium)
- Watermelon (summer, approachable)
- Grapefruit (slightly bitter, sophisticated)
- Elderflower / rose (floral, premium)
- Ginger (functional association, distinctive)
- Peach / mango (tropical, accessible)
Flavour inclusion level: 0.02–0.1% natural flavour in sparkling water — very low compared to full-flavour beverages. Precision matters.
Functional Addition (Optional)
For functional sparkling water:
- Electrolytes (sodium, potassium, magnesium): 50–200mg total per 330ml. Adds a subtle savouriness that actually enhances perceived refreshment.
- Vitamin C: 50–150mg per serving. Supports “better for you” positioning and acts as antioxidant.
- Zinc or B vitamins: At food-safe levels for additional nutritional claim.
Acidifier (Optional)
Citric acid at 0.01–0.05% serves dual purpose — provides a subtle bright note that enhances citrus flavours and lowers pH for better microbiological stability. Declare as “Acidity Regulator (Citric Acid)” or “Acidity Regulator (330)” in ingredient list.
Preservatives
Zero-sugar sparkling water at pH 3.5–4.5 with adequate carbonation and sterile production has reasonable microbiological stability without preservatives — which supports a clean label. If distribution involves temperature excursions, potassium sorbate at FSSAI-permitted levels adds a safety margin.
FSSAI Compliance for Sparkling Water
Product category: Packaged sparkling water falls under FSSAI’s packaged drinking water standards (if plain carbonated water) or carbonated water/beverages standards (if flavoured or with additions). Plain sparkling water without flavour or additives must meet FSSAI’s packaged drinking water quality parameters.
Labelling:
- Plain sparkling water: “Carbonated Water” or “Sparkling Water” — cannot be called “mineral water” unless from a certified natural mineral water source
- Flavoured sparkling water: Product name must reflect the flavour (“Lemon Flavoured Sparkling Water”) and all ingredients declared including natural flavour category
- Zero sugar claim: If claiming zero sugar, product must contain < 0.5g sugars per 100ml
Carbonation level declaration: Not mandated by FSSAI currently, but stating “lightly sparkling” or “sparkling” in the product description is consumer-friendly and accurate.
